Having a repeat c-section in 2 weeks, what dinners can I make that will freeze well and be yummy and easy to?

My mom used to freeze meatloaves... They always came out great after being thawed. And there are lots of different types of meatloaf. My favorite is mozzarella meatloaf---basically meatloaf with a whole bunch of mozzarella cheese and sliced canned mushrooms inside (with the meatloaf rolled around it).
